Vinification: The grapes are carefully selected and hand-harvested. After crushing, the must macerates on the skins for 2-3 days to extract color. Subsequently, the must, separated from the skins, is clarified and refined in stainless steel tanks at a temperature of 0°C. Following this, alcoholic fermentation takes place but is halted at 5.5% alcohol content through filtration, in order to preserve freshness and aromatic intensity
Aging: At least 6 months in stainless steel tanks, following by not less than 3 months in the bottle
Pressure: 2,4 ATM
