Vinification: The grapes are carefully selected and hand-harvested. After pressing, the must macerates on the skins for 2-3 days to extract the color. Then, the must, separated from the skins, is clarified and refined in steel tanks at a temperature of 0°C. Following this, alcoholic fermentation takes place, which is stopped at 5.5% alcohol by filtration to preserve freshness and aromaticity.

Aging: At least 6 months in steel, followed by no less than 3 months in the bottle.

Pressure: 2,4 ATM
