Bluefin tuna | spirulina | porcini | black carrot | sweet potato| nuts

Preparation time: 25 minutes

Ingredients (for 4 persons):

For bluefin tuna burgers:

  • Bluefin tuna (400 gr)
  • Spirulina powder (50 gr)
  • Porcini (200 gr)
  • Chopped nuts (20 gr)
  • EVO
  • Salt
  • Black pepper
  • Red garlic (1 clove)

For black carrots and sweet potato sauce:

  • Black carrots (2)
  • Sweet potato (1)
  • Pine nuts (20 gr)
  • Salt
  • Black pepper
  • Turmeric
  • Juniper
  • Red garlic (1 clove)

Preparation:

For bluefin tuna burgers:

  1. Clean and cut the fresh porcini mushrooms
  2. Place EVO in a pan and add the grated garlic
  3. Add the porcini mushrooms and cook over low heat for 8 minutes
  4. When cooked, add salt and pepper
  5. Prepare eight bluefin tuna fillets, 50 grams each
  6. Mix in a bowl the spirulina powder with salt and pepper
  7. Pass the fillets in that mixture
  8. Cook the fillets in a preheated pan 45 seconds per side
  9. Prepare the burgers adding the porcini mushrooms between the two fillets of bluefin tuna
  10. Add the chopped nuts

For black carrots and sweet potato sauce:

  1. Clean and peel the black carrots and the sweet potato
  2. Boil the black carrots and the sweet potato for 10 minutes over medium heat in salted water with a clove of red garlic
  3. Whisk the black carrots, sweet potato and red garlic with cooking water, pine nuts, turmeric, black pepper, and juniper
  4. Serve
